If I delete the app from my iPad, then reinstall the app, will I pick up where I am. Or do I lose everything and start over with nothing?
I need to decrease my documents and data in my storage.

As long as you log in with the same information, you won’t lose anything. If you create a new login profile, you will have to start from beginning.

If you have email on your ipad be sure to not only delete them from your inbox, but also your trash.
